Creamy Chicken & Bacon Ranch Chowder: A Comforting Delight

Ingredients

  • 150g bacon
  • 1 medium onion, diced
  • 400g potatoes, diced
  • 200g corn (canned or frozen)
  • 600ml chicken broth
  • 200g cooked chicken, shredded
  • 200ml heavy cream
  • 2 tablespoons ranch seasoning
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
  2. Add diced onions to the pot and sauté until translucent, about 5 minutes.
  3. Stir in diced potatoes and corn, followed by chicken broth. Bring to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 15 minutes.
  5. Add shredded chicken and cream, stirring until heated through.
  6. Mix in ranch seasoning and adjust salt and pepper to taste.
  7. Top with crispy bacon and chopped green onions before serving.
