Ingredients

  • 300g fresh salmon, diced
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 450g potatoes, peeled and diced
  • 750ml vegetable broth
  • 240ml heavy cream
  • 2 tablespoons fresh dill, chopped
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. In a large pot, melt butter over medium heat and sauté chopped onions and garlic until translucent.
  2. Add diced potatoes and cook for about 5 minutes, stirring occasionally.
  3. Pour in the broth and bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Stir in the cream and let it simmer again, allowing for the chowder to thicken slightly.
