Ingredients

  • 1 whole chicken (approximately 1.5 kg)
  • 30 g astragalus root
  • 100 g dried dates
  • 50 g goji berries
  • 2 carrots, sliced
  • 1 daikon radish, sliced
  • 4 garlic cloves
  • Salt, to taste
  • Pepper, to taste
  • 2 green onions, sliced, for garnish

Instructions

  1. In a large pot, add 1 whole chicken (approximately 1.5 kg) and cover with water, bringing it to a boil.
  2. Add 30 g of astragalus root, 100 g of dried dates, and 50 g of goji berries to the pot.
  3. Incorporate 2 sliced carrots, 1 sliced daikon radish, and 4 garlic cloves into the mixture.
  4. Reduce the heat, cover, and let it simmer for 1.5 to 2 hours until the chicken is tender.
  5. Remove the chicken, shred the meat, and return it to the pot, discarding the bones.
  6. Season with salt and pepper to taste, and garnish with thinly sliced green onions before serving.
