Ingredients

  • 500g chicken breasts
  • 250g red potatoes
  • 250g yellow potatoes
  • 250g russet potatoes
  • 300g corn on the cob
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon dried guascas
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons olive oil
  • Green onions, chopped for garnish
  • Avocado slices for serving
  • Capers for garnish

Instructions

  1. Start by preparing the three types of potatoes: peel and dice the potatoes into cubes. Set aside.
  2. In a large pot, add water and bring it to a boil. Add the chicken breasts, corn on the cob, and diced potatoes.
  3. Add chopped onions, garlic, and the herb guascas to the pot, which will add authentic flavor.
  4. Season with salt and pepper to taste, and simmer for about 30 minutes until the chicken is cooked through and potatoes are tender.
