Ingredients

  • 1 head of broccoli, chopped
  • 1 cup sharp aged cheddar cheese, shredded
  • 6 cloves garlic
  • 1 medium onion, chopped
  • 4 cups vegetable broth
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Chopped chives for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Spread garlic cloves on a baking sheet and drizzle with olive oil. Roast for 20-25 minutes.
  2. In a large pot, melt butter over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.
  3. Add chopped broccoli and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until the broccoli is tender, about 10 minutes.
  4. Once the garlic is done, squeeze it out of the skins and into the pot. Blend the soup until smooth using an immersion blender or regular blender.
  5. Return the soup to the pot and stir in the sharp cheddar cheese until melted and creamy. Season with salt and pepper to taste.
  6. Serve hot, garnishing with additional cheddar, roasted garlic, and chopped chives, if desired.
