Ingredients

  • 1 cup white beans
  • 2 smoked ham hocks
  • 4 cups water
  • 1 chopped onion
  • 3 bay leaves
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Start by soaking 1 cup of white beans in water overnight.
  2. In a large pot, add 2 smoked ham hocks and cover with 4 cups of water.
  3. Bring the water to a boil, then reduce to a simmer.
  4. Add 1 chopped onion, 3 bay leaves, and season with salt and pepper.
  5. Cover and simmer for about 1.5 hours until the ham is tender.
  6. Remove the ham hocks and let them cool slightly, then shred the meat off the bones.
  7. Return the shredded ham to the pot along with the soaked and drained beans.
  8. Simmer for an additional 45 minutes or until the beans are tender.
