Savory Classic Oxtail Stew with Rich Gravy

Ingredients

  • 1.5 kg oxtail
  • 2 tablespoons olive oil
  • 2 large onions, chopped
  • 3 carrots, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 750 ml red wine
  • 1 liter beef broth
  • 400 g canned tomatoes
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 200 g cherry tomatoes
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 160°C (320°F).
  2. Season the oxtails generously with salt and pepper.
  3. In a large ovenproof pot, heat olive oil over medium-high heat. Brown the oxtails on all sides, about 5-7 minutes. Remove and set aside.
  4. Add chopped onions, carrots, and garlic to the pot. Sauté until softened, about 5 minutes.
  5. Stir in the tomato paste and cook for another 2 minutes until it darkens slightly.
  6. Pour in the red wine, scraping up any browned bits from the bottom of the pot, and let it reduce for about 5 minutes.
  7. Add the browned oxtails back into the pot along with beef broth, tomatoes, bay leaves, and thyme. Bring to a simmer.
  8. Cover the pot and transfer it to the oven. Braise for 2-3 hours until the meat is tender and falling off the bone.
  9. Once done, remove from the oven and stir in cherry tomatoes. Simmer on the stove for an additional 15-20 minutes.
  10. Adjust seasoning to taste, garnish with fresh parsley, and serve hot.
