Hearty Venison & Root Vegetable Stew for Comforting Meals

Ingredients

  • 700g venison, diced
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 3 carrots, cut into chunks
  • 2 parsnips, cut into chunks
  • 1 liter beef stock
  • 250ml red wine
  • Salt and pepper to taste
  • 3 sprigs of fresh rosemary
  • 200g cherry tomatoes, halved

Instructions

  1. In a large pot, heat oil over medium heat. Add diced venison and brown on all sides.
  2. Remove venison and set aside. In the same pot, add chopped onions and sauté until translucent.
  3. Add minced garlic, carrots, parsnips, and any additional vegetables. Cook for a few minutes.
  4. Return the venison to the pot and sprinkle with salt, pepper, and fresh rosemary.
  5. Pour in the beef stock and red wine, bringing the mixture to a boil.
  6. Reduce heat to low, cover pot, and let it simmer for about 1.5 to 2 hours, until venison is tender.
  7. Adjust seasoning as needed and stir in halved cherry tomatoes during the last 10 minutes of cooking.
  8. Serve hot with crusty bread or over mashed potatoes.
