Ingredients

  • 500g ground meat (beef or turkey)
  • 100g breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 400g crushed tomatoes
  • 1 liter chicken or vegetable broth
  • 200g orzo pasta
  • Herbs (basil, oregano)
  • Fresh parsley, for garnish
  • Grated cheese, for serving

Instructions

  1. In a bowl, mix ground meat, breadcrumbs, egg, garlic, salt, and pepper. Form into meatballs.
  2. In a large pot, heat olive oil over medium heat. Add meatballs and brown them on all sides.
  3. Remove meatballs and set aside. In the same pot, sauté diced onions, carrots, and celery until soft.
  4. Add crushed tomatoes, broth, and herbs to the pot, stirring well.
  5. Once boiling, return the meatballs to the pot and let simmer for 15 minutes.
  6. Add orzo and cook according to package instructions, about 8-10 minutes.
  7. Season with salt and pepper to taste. Serve hot, garnished with parsley and grated cheese.
