Ingredients

  • 500 grams chicken breast, diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons curry powder
  • 2 carrots, chopped
  • 1 bell pepper, chopped
  • 400 ml coconut milk
  • 500 ml chicken broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a pot, heat some oil over medium heat and add chopped onions, sauté until translucent.
  2. Add minced garlic, ginger, and curry powder; cook for 1-2 minutes until fragrant.
  3. Stir in chicken pieces and cook until browned on all sides.
  4. Add chopped carrots, bell peppers, and coconut milk into the pot.
  5. Pour in chicken broth and bring the mixture to a boil.
  6. Reduce heat and let it simmer for 20-25 minutes until the chicken is cooked through and vegetables are tender.
  7. Season with salt and pepper to taste, then garnish with fresh cilantro.
