Ingredients

  • 500g white beans
  • 200g bacon, diced
  • 4 duck legs
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 400g crushed tomatoes
  • 500ml chicken broth
  • 2 sausages, cut into pieces
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 150°C (300°F).
  2. In a heavy pot, cook diced bacon over medium heat until crisp. Remove and set aside.
  3. Sear the duck legs in the bacon fat until browned. Remove and set aside.
  4. Sauté chopped onion, garlic, and carrot in the same pot until softened.
  5. Add crushed tomatoes, white beans, and chicken broth; stir to combine.
  6. Season with thyme, bay leaf, salt, and pepper.
  7. Place duck and bacon back in the pot. Cover and simmer for 2-3 hours on low heat.
  8. Add sausages during the last hour of cooking.
  9. Adjust seasoning as necessary before serving.
  10. Serve hot, garnished with crusty bread or breadcrumbs.
