Ingredients

  • 4 strips of bacon
  • 1 medium onion, chopped
  • 2 medium potatoes, diced
  • 3 cups of fresh corn kernels
  • 4 cups of vegetable or chicken broth
  • 1 cup of heavy cream
  • Salt and pepper, to taste
  • Chopped green onions, for garnish

Instructions

  1. Start by cooking the bacon in a large pot over medium heat until crispy. Remove and set aside on paper towels to drain excess fat.
  2. In the same pot, add chopped onions and sauté until tender, about 5 minutes.
  3. Add diced potatoes and fresh corn to the pot, mixing well with the onions.
  4. Pour in vegetable or chicken broth, bring to a boil, then reduce heat and simmer until potatoes are soft, about 15 minutes.
  5. Add heavy cream and stir to combine, cooking for an additional 5 minutes on low heat.
