Ingredients

  • 1 kg beef chuck, cut into cubes
  • 150 g bacon, diced
  • 2 medium onions, chopped
  • 3 large carrots, sliced
  • 250 g mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons flour
  • 750 ml red wine
  • 500 ml beef broth
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 160°C (320°F).
  2. In a large Dutch oven, cook the bacon on medium heat until crispy, then remove and set aside.
  3. In the same pot, add cubed beef and sear until browned on all sides.
  4. Add chopped onions and carrots, sautéing until softened.
  5. Stir in garlic and cook for another minute.
  6. Sprinkle flour over the mixture and stir to combine.
  7. Pour in the red wine, scraping the bottom of the pot to release any brown bits.
  8. Add beef broth, mushrooms, and the cooked bacon back to the pot.
  9. Season with salt, pepper, and herbs. Bring to a simmer.
  10. Cover and transfer the pot to the oven. Cook for 2 to 3 hours until beef is fork-tender.
  11. Before serving, allow the stew to cool slightly, then skim off any excess fat.
  12. Serve hot with your choice of side.
