Ingredients

  • 1 cup green split peas
  • 2 tablespoons olive oil
  • 1 diced onion
  • 2 chopped carrots
  • 2 celery stalks
  • 1 pound diced ham
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup frozen peas
  • Fresh parsley for garnish (optional)

Instructions

  1. Begin by rinsing 1 cup of green split peas under cold water, then set aside.
  2. In a large pot, heat 2 tablespoons of olive oil over medium heat.
  3. Add 1 diced onion, 2 chopped carrots, and 2 celery stalks, cooking until softened (about 5 minutes).
  4. Stir in the rinsed split peas, 1 pound of diced ham, and 6 cups of chicken broth, bringing to a boil.
  5. Add 1 teaspoon of dried thyme, 1 bay leaf, and salt and pepper to taste.
  6. Reduce heat to low, cover, and simmer for 45 minutes, or until peas are tender.
  7. Remove the bay leaf and use a potato masher to slightly mash the soup for a creamier texture, if desired.
  8. In the last 10 minutes of cooking, add 1 cup of frozen peas for freshness.
  9. Serve hot, garnished with fresh parsley if desired.
